Recipes from Erlene

I'm gonna try to post these recipes again, and maybe this time it will work.

Pumpkin Bars
~to make the crust~
1 cup flour
1/2 cup quick oats
1/2 cup brown sugar
1/2 cup butter
Combine ingredients to make crust.
Place in a greased 13x9 pan
Bake 15 min. at 350 degrees

~next, the filling~
2 cups pumpkin
1 can milk
2 eggs
3/4 cups sugar
1/2 tsp salt
1 tsp cinnamon

1/2 tsp ginger
1/4 tsp cloves
Combine and this goes onto the baked crust.
Bake for 20 min. at 350 degrees

~now, for the topping~
1/2 cup brown sugar
2 tbl butter
1/2 cup nuts (walnuts, pecans or....)
Combine and sprinkle on pumpkin bars.
Bake for 15 to 20 minutes at 350 degrees.
Cool and cut into squares!

So far, so good!
Now to add the 2nd recipe (there's 3 altogether).

Raspberry Muffins
2 free-range eggs
1 cup sugar
1/2 cup oil
1 cup raspberries (fresh or frozen)
1 tsp baking soda
1/2 tsp ground cinnamon

Preheat oven to 350 degrees. Whisk eggs in mixing bowl,
using fork. Add sugar and beat until mixture turns yellow.
Stir in oil. Add raspberries and mix well. Add the rest of
the ingredients and mix well.
Divide mixture between 8 regular or 6 large greased or
lined muffin tins.
Cool completely before removing from muffin tins.


Here's a great filling recipe for breads such as Pumpkin.
Make bread recipe that makes 2 loaves.

1 8oz. cream cheese, softened
1/2 cup sugar
1/2 cup chopped pecans, toasted
1 egg
Mix well.
Pour bread batter halfway in bread loaves, save the remaining.
Pour Filling mixture on top of each bread batter.
Now pour remaining batter over filling.
Bake bread for 1 hour and 15 min or until toothpick comes out clean.
Cool in pan for 10 minutes. Cool completely before cutting

    I met Erlene at work, she passed by my office and saw my Ricky Tims book - we struck up a conversation on the subject of quilting and have been friends since!
    We started talking about recipes this Fall and decided to do a recipe exchange! I shared the Holy Cow cake, an Apricot slab cake recipe and something else!

    This Pumpkin Bar recipe is one that Erlene takes out to a logging job-site and is one of the men's favorite.
